Thanksgiving does not have to be a time that you throw out your healthy eating and indulge in a myriad of unhealthy food. Thanksgiving is a time of gratitude, celebrating family and everything good in our lives. I believe we should focus more on relationships and family and less time on unhealthy food that leaves everyone sprawled out on the couch exhausted.

These Healthy Thanksgiving Recipes do not sacrifice, taste, texture or pleasure but they allow you to feel energized and vibrant on Thanksgiving day.

I believe we should all enjoy the Holidays, but I do not agree that we should allow ourselves to completely derail our healthy diet over celebrations. A Healthy Thanksgiving based on healthy Thanksgiving recipes can be just as delicious as its unhealthy counterpart.

Healthy Thanksgiving Holiday Cranberry Drink Recipe

2 1/2 apples
2 oranges
1/2 pear
1 1/2 c. pineapple
2 c. cranberries

Juice all ingredients, pour juice into a large serving bowl and add:

1/4 c. maple syrup
1/2 tsp. vanilla
1/4 tsp. cinnamon
1/8 tsp. nutmeg
dash allspice
dash cloves
3 drops almond extract
3 drops rum extract

Stir until well combined, chill 1 hour before serving.

Egg Nog

This eggnog is not thick and overly sweet like the junk you buy in the grocery store, it is light, creamy and delicious! I never liked egg nog until becoming vegan and tasting the much lighter soy based version, this is slightly creamier than soymilk based egg nog.

1 1/4 c. water
1 c. cashews
1 Tb. coconut oil
1/3 c. maple syrup
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. rum extract

Blend until creamy.

Healthy Thanksgiving Tofurkey Recipe

I went through about 4 recipes before finally settling on this one. It has a nice texture and flavor, although don't expect it to 'taste' like turkey, it has its own delicious flavor.

**This is not meant to taste or have the texture of turkey, it is meant to be a main dish in its own right.

2 c. wheat gluten
1/4 c. garbanzo flour
3/4 c. nutritional yeast
1/4 cornstarch

Mix together in a bowl. set aside.

1 pkg. mori nu tofu
2 Tb. lemon juice
1/4 c. peanut butter
1 c. vegetable broth
1 Tb. tamari
1 tsp. liquid smoke
2 Tb. olive oil

B lend in blender until creamy. set aside.

1/4 c. minced dry onion
1 Tb. thyme
1/2 Tb. rosemary
1 Tb. garlic
2 tsp. sage
1 1/2 Tb. salt
1/4 tsp. nutmeg

Add the spices to the dry ingredients, then add the wet ingredients to the dry ingredients and mix well. The dough should be soft. form it into whatever shape you prefer.

Broth:

2 c. water
1 Tb. tamari
2 Tb. nutritional yeast
1 tsp. garlic powder
1 Tsp. onion powder
1 tsp. salt
1 tsp. poultry seasoning
1 Tb. olive oil

Simmer the tofurkey for 1 1/2 hours, turn it over every 30 minutes. preheat the oven to 350 degrees and bake for 1 hour. Serve with gravy.

Healthy Thanksgiving Tempeh 'Sausage' Stuffing Recipe

6 c. whole wheat bread cubed

leave cubed bread out overnight on a cookie sheet, in the morning broil for 5 minutes.

1 c. onion diced
3/4 c. celery chopped
1 1/2 c. tempeh sausage

Broth:

2 1/2 c. water
1/4 nutritional yeast
2 tsp. salt
1 1/2 tsp. poultry seasoning
1/2 tsp. liquid smoke
1 1/2 Tb. tamari
1/2 Tb. garlic powder

Tempeh Sausage:

1 1/2 c. crumbled tempeh
1/2 c. vegetable broth
2 Tb. nutritional yeast
1 1/2 tsp. salt
3/4 tsp. poultry seasoning
1/2 tsp. liquid smoke
1 tsp. tamari
1 tsp. olive oil

Herbs:
1 tsp. onion powder
1/2 tsp. pepper
1 1/2 tsp. thyme
1 tsp. rosemary
1/2 tsp. sage
1/4 tsp. nutmeg
2 Tb. nutritional yeast
3 Tb. olive oil

Preheat oven to 375. In a 9X13 pan, add the bread, onion and celery, set aside. Make the tempeh sausage and add it to the pain. Stir to mix well. Pour the broth on top of the bread mixture, add the Herb mixture and bake for 50 minutes.

Healthy Thanksgiving Mashed Potatoes and Gravy Recipe

8 potatoes chopped

**Do not remove the skin, the potassium'ring' in the potato is found just under the skin and when you remove the skin you remove important nutrients.

Place the potatoes in a stock pot and cover with water. Boil until soft, about 20 minutes. Strain out the water and pour the potatoes into a mixer. Add:

1/4 c. soymilk
1 Tb. earth balance (opt)
1 1/2 tsp. salt
1/4 tsp. pepper

Mix all ingredients until the potatoes are well creamed to your personal taste.

Gravy

Serves 3

1 c. purified water
1 Tb. nutritional yeast
2 tsp. tamari
1 tsp. garlic powder
1 tsp. poultry seasoning
1/2 tsp. salt
1 Tb. cornstarch

Add all ingredients, except cornstarch in a saucepan. Bring to a boil. Mix the cornstarch with a little water until dissolved, slowly pour the cornstarch mixture into the boiling gravy while stirring. Continue stirring until gravy thickens.

Ranch Dressing

Serves 6

I have been working on creating a creamy ranch dressing for years! It has been very difficult to recreate the texture and taste of bottled ranch dressings, but this dressing is amazing! My husband is a diehard Ranch dressing fan and he loved this one! Enjoy!

1 c. cashews
1/3 c. mori nu tofu
1 c. water
2 Tb. lemon juice
1 1/2 tsp. parsely
1 tsp. chives
1 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. dill
1 tsp. salt
dash pepper

Blend cashews, tofu, water and lemon juice in a blender until creamy. Depending on your blender you may need to blend for 5 or even 10 minutes. Pour 'cream' into a bowl and add remaining ingredients. Stir and serve.

Thanksgiving Corn

Serves 6

This is just a spur of the moment creation after I made the ranch dressing. My family loved it and it looks so pretty I thought I would name it Thanksgiving Corn because it has that extra special addition of ranch dressing, YUM!

3 c. corn (canned or thawed)
1 c. ranch dressing [recipe above]

Heat large skillet over medium heat, add corn, cook until corn is heated through, add ranch dressing and heat for about 2 minutes. Serve.

Candied Yam Casserole

Serves 6

2 large yams

Bake at 450 for 50 minutes. When the yams are done the skin should easily peel off of the yam. peel the yams and mash. Once yams are done reduce oven to 350.

1/2 c. water
1/4 c. cashews
1/4 c. maple syrup
3/4 tsp. vanilla
1/2 tsp. salt
1/2 tsp. cinnamon

Blend until completely creamy. Stir into the mashed yams. Spread the yam mixture into an 8X8 pan.

Topping
1/3 c. whole wheat flour
1/2 c. succanut
3 Tb. Earth Balance
1/4 tsp. cinnamon

Add all ingredients in a small bowl and mash with a fork until crumbly. Sprinkle over the yam mixture. Bake yams at 350 for 25 minutes.

Croissant Rolls

24 croissants

These are not your average 'rolls' these are light, fluffy and beautiful! They are my family's favorite rolls. The recipe was adapted from The Lion House roll recipe. Enjoy!

2 cups warm water (110 degrees)
2 tablespoons dry yeast
2 teaspoons salt
2/3 cup soymilk powder (it must be powder not soymilk)
1/4 cup turbinado sugar
1/3 cup Earth Balance
5-5 1/2 cups whole wheat pastry flour

Combine the water, yeast and turbinado in mixer, mix lightly and proof for 5-10 minutes. The mixture should look fluffy or the yeast should at least be 'blooming.' If not the yeast was probably killed from too hot of water. Throw it out and try again. The water should be feel very warm but should not sting your finger.

Add remaining ingredients to the yeast mixture, mix well. The dough is sticky. Cover bowl with plastic wrap. Raise for 90 minutes.

The dough will be sticky so use oil, flour or wet hands when handling the dough. Oil your rolling pin and counter before rolling out rolls.

Roll out into a large circle, about 16-18 inches in diameter. Use a pizza cutter to cut triangles, about 2 1/2 inches at the widest part. Roll the triangles from wide end to short end and place on a cookie sheet. It should make 24 croissants.

Raise Croissants 30 minutes. Preheat oven to 375. Bake for 25 minutes. Brush with more earth balance after you remove them from the oven.

Sweet Cranberry Relish

Serves 6

2 c. fresh cranberries
1 peeled orange
3/4 c. dates
1/2 c. pecans
1 apple chopped

Process all ingredients in food processor until very fine. Serve chilled.

Christmas Cranberry Salad

This is a delicious creation based on the SAD version with whip cream. You will not miss the dairy based whip cream in this delicious salad.

2 c. cranberries
1 1/2 c. pineapple chunks
1 c. pecans

Process in food processor until fine. Pour into a large bowl.
1 c. cashews
1/4 c. maple syrup
1/3 c. agave nectar
1 tsp. vanilla
1/2 Tb. coconut oil

Blend until creamy, stir into cranberry mixture. Chill 30 to 1 hour before serving.

Strawberry Vinaigrette Dressing and Holiday Salad

Serves 4 as side dish

This can be served as a Thanksgiving side dish or a Christmas dish. It has beautiful colors and tastes delicious. The best part is that the dressing is oil free! Enjoy!

1/2 c. red wine vinegar
1/2 c. maple syrup
1/2 c. strawberries (fresh or thawed)
1/3 c. zucchini peeled and chopped
1 Tb. stoneground mustard
1 clove garlic
1/4 c. macadamia nuts or cashews
dash salt

Blend until completely creamy.

Salad:

4 c. spinach chopped
1/2 c. dried cranberries
2 pears thinly sliced
1 apple diced
1/2 c. pecans chopped
1/4 c. red onion diced
1/2 c. broccoli finely chopped
1/2 c. cauliflower finely chopped
1/3 c. carrot grated

Pumpkin Pie

Serves 8

Pumpkin pie is one of my favorite desserts so this had to be rich, creamy and delicious! This pie is divine!

Crust:

1 1/2 c. whole wheat pastry flour
1/2 c. Earth Balance
1/3 c. ice water
1 tsp. salt

Preheat oven to 350. Mix all ingredients in mixer until dough forms a ball. Press into pie tin, poke the dough with a fork every inch so that it does not develop large air pockets. Bake for 20 minutes.

Filling:

3 c. pumpkin
3/4 c. water
2/3 c. cashews
1 c. succanut
2 Tb. whole wheat flour
3 Tb. cornstarch
1 Tb. molasses
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/8 tsp. allspice
1/4 tsp. salt
dash ground cloves

Blend the cashews and water until completely creamy, this may take several minutes depending on the quality of your blender. Combine all ingredients in a mixer and mix until creamed together. Pour into baked pie shell and bake 350 for 40 minutes.

Apple Pie w/ Caramel Apple variation

Serves 8

Hang on to your hats, this is a fabulous All American apple pie! The caramel twist is optional but it really kicks this pie up a notch, watch out you may weigh 10 lbs. more in the morning because you won't want to stop eating this one.

Crust:
1 1/4 c. Whole wheat pastry flour
1/2 c. sunflower oil
1/2 Tb. lemon juice
1 tsp. turbinado
1 tsp. salt
1/4 c. ice water

Mix all ingredients in mixer until dough forms a ball. Wrap in saran wrap and freeze while you prepare the filling.

Filling:

6 Gala apples thinly sliced
3/4 c. turbinado
1/4 c. maple syrup
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1 Tb. lemon juice
1 Tb. coconut oil
1 Tb. Earth Balance
1 1/2 tsp. vanilla
1/4 tsp. salt
3 Tb. flour

Combine filling ingredients in a large bowl, stir until all apples are coated well. Take the crust dough out of the freezer and press into pie tin. Pour the filling into the crust.

Caramel optional topping:

1/2 c. Earth Balance
2 c. succanut or Turbinado sugar
1/2 c. soymilk
1/3 c. brown rice syrup
dash salt
1 tsp. vanilla

Boil all ingredients in a sauce pan. Have a cup of cold ice water near the stove. After about 5 minutes of boiling begin dropping a small amount of caramel into ice water at regular intervals, when the caramel forms a hard ball in the ice water, remove from heat and pour over apple pie.

Topping:

1/2 c. whole wheat flour
1 c. oats
1/2 c. succanut
1 tsp. cinnamon
1/2 tsp. baking powder
3 Tb. coconut oil or Earth Balance
1/4 tsp. salt

Combine all topping ingredients in a bowl or mixer, stir until it becomes crumbly. Crumble over the top of the pie. Bake at 375 for 1 hour.
