These ice cream recipes were created to help you move toward your optimal weight and health without giving up your favorite meal of the day, dessert. Dessert is something most people do not want to give up, even if they strongly desire to lose weight or improve their health.
I have created a myriad of low fat ice cream recipes, some of them do have some added whole food fats like cashews, others are based solely on fruit for those who are ready to step up to the challenge and remove added sugars from their diet and decrease fat intake due to health concerns like heart disease or diabetes.
Low fat ice cream has gotten a bad rap, many people say it tastes like frozen ice, that is what happens with dairy based ice creams which are not healthy for you anyway. These low fat ice cream recipes were designed to be decadent, creamy and healthy!

Low Fat Blueberry Banana Ice Cream

There are several ways to make this ice cream, the best is to use a champion or green star juicer, but a high speed blender or food processor will work as well.
4 frozen bananas
1 c. frozen blueberries
Run through a champion or green star juicer on the blank plate, alternate blueberries and bananas to mix them well. It will come out like soft serve ice cream.

Another way to make this low fat ice cream recipe is to put the ingredients in a blender or food processor and add 1/2 c. of silk almond or coconut milk slowly, only add enough to get it moving, too much will cause the ice cream to go runny.

Strawberry Banana Ice Cream

Serves 4
3 frozen bananas
1 c. frozen strawberries
2 dates [run them under hot water to really soften or they won't blend]
1/2-2/3 c. soymilk or almond milk
Begin blending and start with 1/2 c. soymilk, be VERY Careful not to get too much soymilk or it will end up soupy, you want a thick ice cream so add soymilk carefully. You may need to use a spoon or whisk to help the blender out, press it mixture downward and then use a circular motion to help the blender suction the ingredients down.
**Opt. use raspberries, blackberries, blueberries, any fruit you like.
***For less sweet fruits you can add 1/8 tsp. stevia to give it extra sweetness but be careful not to add too much or your finished ice cream will have an after taste, you can also add dates, date sugar, or another favorite sweetener.

Low Fat Chocolate Ice Cream Recipe
Serves 4
4 frozen bananas
6 honey dates [make sure the dates are VERY soft, use hot water to soften if necessary]
2 Tb. cocoa powder
1 tsp. carob powder [for color and sweetness]
2 Tb. unsweetened coconut flakes
1/2 c. soymilk or almond milk
Begin blending and start with 1/2 c. soymilk, be VERY Careful not to get too much soymilk or it will end up soupy, you want a thick ice cream so add soymilk carefully. You may need to use a spoon or whisk to help the blender out, press it mixture downward and then use a circular motion to help the blender suction the ingredients down.

Low Fat Peach Ice Cream Recipe
Serves 4
4 frozen bananas
6 honey dates [make sure the dates are VERY soft, use hot water to soften if necessary]
1 c. frozen peaches
2 Tb. unsweetened coconut flakes
1/2 c. soymilk or almond milk
Begin blending and start with 1/2 c. soymilk, be VERY Careful not to get too much soymilk or it will end up soupy, you want a thick ice cream so add soymilk carefully. You may need to use a spoon or whisk to help the blender out, press it mixture downward and then use a circular motion to help the blender suction the ingredients down.

Low Fat Burnt almond Fudge Ice Cream Recipe

3 c. soymilk
2 1/2 c. cashews
2 Tb. coconut oil
3/4 c. cocoa
1/4 tsp. salt
1/4 tsp. vanilla
1 1/2 c. maple syrup
1/2 c. turbinado
1 1/2 tsp. almond extract
2 Tb. non-dairy chocolate chips
2 c. chopped roasted salted almonds

Blend all except almonds together until creamy. Freeze according to ice cream maker manufacturer directions

Low Fat Chocolate Ice Cream
2 c. cashews
4 c. Silk Almond milk
1/2 c. maple syrup
1/2 c. turbinado sugar
1/3 c. cocoa powder
2 tsp. vanilla
¼ tsp. cinnamon
¼ tsp. salt

Blend all ingredients until completely creamy. You may have to blend this for 5 minutes depending on your blender. Freeze according to ice cream maker manufacturer directions.

Low Fat Strawberry Ice Cream Recipe

2 c. cashews
4 c. Silk Almond milk
1/2 c. maple syrup
1/2 c. turbinado sugar
1 c. frozen strawberries
2 tsp. vanilla
¼ tsp. salt

Blend all ingredients, except strawberries until completely creamy, You may have to blend this for 5 minutes depending on your blender ,then add strawberries and blend until broken into chunks.. Freeze according to ice cream maker manufacturer directions.
Low Fat Vanilla Ice Cream Recipe

Low Fat Oreo Ice Cream Recipe

15 oreo cookies
1 Tb. vanilla
¼ tsp. salt

Blend all ingredients, except strawberries until completely creamy, You may have to blend this for 5 minutes depending on your blender ,then add oreos and blend until broken into chunks.. Freeze according to ice cream maker manufacturer directions.

These low fat ice cream recipes are very low in saturated fat, they do not contain any cholesterol, they are made from whole food fats such as cashews that contain vitamins, minerals, fiber, and other nutrients rather than junk food. I have provided both whole fruit only low fat ice cream recipes, and low fat ice cream recipes that are a little creamier and utilize more natural sweeteners than refined sugar. Enjoy!
